Mediterrean Bean Salad

With just five ingredients, this bean dish is simple yet packed with flavor—marinating the beans lets them soak up the tangy vinaigrette. Perfect for picnics or quick summertime lunches and dinners, it’s a make-ahead dish that only gets better as it sits.

Ingredients
- 2 (15 oz) cans butter beans, drained and rinsed
- ½ cup Greek vinaigrette
- ½ (12 oz) jar fire-roasted red pepper halves
- 1 large romaine heart
- ¼ cup shaved Parmesan
Steps
- In a medium bowl, combine the beans and vinaigrette. Thinly slice the red pepper halves and add to bowl, stirring to combine. Season with salt and pepper. Cover and let marinate in the fridge for at least 1 hour and up to 1 day.
- When ready to serve, separate the romaine leaves on a large serving platter. Spoon the marinated bean mixture over lettuce cups. Garnish with the Parmesan and serve.
