Turkey/ Beef Meatloaf

Cooked, Meat, Turkey

Cook Time: 25 mins, plus about 1 hr cooking time Servings: 4 to 6 servings

Ingredients

Unsalted butter or cooking spray, for coating the pan

2 pounds 85 % lean ground turkey breast

1/2 cup quick-cooking oats or bread crumbs

1/2 cup Parmesan cheese, grated on the small holes of a box grater

2 beaten egg

1/3 cup ketchup

1/3 cup finely chopped yellow onion

1/4 cup Worcestershire sauce

2 ablespoons soy sauce

1 1/2 teaspoons minced fresh thyme leaves

1 teaspoon minced fresh sage leaves

1/2 teaspoon freshly ground black pepper

2 medium garlic cloves, minced

Directions

1. Heat the oven to 400°F and arrange a rack in the middle. Coat a 9-by-5-inch loaf pan with butter or cooking spray; set aside.

2. Place all the remaining ingredients in a large bowl and mix, using clean hands, until combined (don’t squeeze or overwork). Transfer the mixture to the pan, spread to the edges, and smooth out the top. Bake until cooked through, about 50 to 60 minutes. Let sit 10 minutes before serving.

The Head Tomatoes (aka Cheryl Benton) loves a perfect dirty martini. And if you read her novel, “Can You See Us Now?” her three main characters love them too. Here’s the recipe.


Judy’s Coffee Chicken

Heat oven to 350

  • 4 lbs chicken cut up or any parts you like
  • 3/4 cup of coffee
  • 1/3 C ketchup
  • 5 Tbs soy
  • 2 Tbs lemon juice
  • 2 Tbs wine vinegar
  • 1 Tbs olive oil
  • 1/3 C brown sugar
  • 2 cloves garlic crushed
  • S & P
  • 2 Tbs flour
  • Sprinkle salt and pepper on chicken. Put in shallow pan sprayed with Pam or oil,  skin side up

In small pot, combine all ingredients except flour and simmer for 5 minutes

Pour over chicken and bake uncovered for 45 minutes basting every 15 minutes

Sprinkle chicken with flour. Turn to 400. Baste and cook 20 minutes till brown and chicken is cooked through
