Zucchini Noodles with Vodka Sauce

Light and healthy, even when you’re in a hurry. Low-carb spiraled zucchini ribbons only need a quick sauté in the pan before they’re ready for pasta sauce. In this recipe, we selected our rich and vibrant tomato vodka sauce, punched up with extra garlic and a pinch of red pepper flakes.

Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic, sliced thin
  • ¼ teaspoon red pepper flakes
  • ½ 24 z. jar Rao’s Homemade® Vodka Sauce
  • Pecorino cheese
  • Freshly ground black pepper
  • Basil leaves
  • 2, medium Zucchini
  • Pecorino Romano Cheese



Directions

  1. In a large bowl, spiralize zucchini into thin noodles, set aside.
  2. In a large saucepan heat oil over medium-high heat, add garlic and red pepper flakes.
  3. Saute until golden and fragrant, about 1 minute.
  4. Add zucchini noodles, season with salt and pepper.
  5. Cook for 2-3 minutes until zoodles have just softened, but still al dente.
  6. Meanwhile, heat Rao’s Homemade® Vodka Sauce in a medium saucepan over low to medium heat.
  7. Ladle Rao’s Homemade® Vodka Sauce over zoodles.
  8. Top with Pecorino cheese, black pepper and basil leaves.
