An Afternoon Tea Celebration 

An Afternoon Tea is a wonderful way to celebrate a special occasion ~ birthday, anniversary, Mother’s Day, graduation, and reunions to name a few. As springtime brings on the bridal season a meet the parents, engagement, shower or a wedding tea is an easy way to entertain from a sit down affair for an intimate gathering to a buffet for a larger group. Small floral vignettes set on a table with a theme of classical white or a burst of color will make your party beautiful. My herbs de Provençe Chicken Salad recipe is a refreshing addition for the warner months ahead.

INGREDIENTS:  6 White meat Chicken Tenders|  8 Oz Chicken Bone Broth|  1 teaspoon Reva Paul’s Seasoning Mix* | ½ teaspoon ground Ginger | ½ teaspoon Ground Cinnamon| 1 Tablespoon Herbs de Provençe| Water|

For Prep: 2 Tablespoons Mayonnaise| Additional 1 Tablespoon of Herbs de Provençe| Optional~ Lavender Sprigs for garnish. Optional ~ Chopped Pecans to fold into the chicken salad. *Reva Paul’s Season Mix: 2.5 Tablespoons each Onion and Garlic Power, 1 teaspoon salt, ½ teaspoon black Pepper. Place in a jar and shake until mixed together. Store in a cool, dry place.

 PRPEARATION: Place first 7 ingredients into a large, heavy bottom pot. Add enough water to cover chicken by two inches. Over a medium heat on the stovetop bring to a boil and cook until chicken is white inside~ approximately 15 minutes or more. (Do not microwave.)  Remove chicken from pot. Place chicken into a food processor with mayonnaise and herbs de Provençe and pulse until a spread texture.  If using, fold in pecans.  Garnish with lavender sprig.

A delicious afternoon tea sandwich or served as a main course salad.
