1. Chilled Cucumber Yogurt Soup (Greek-style)

Refreshing, light, and tangy — perfect for hot afternoons.

Ingredients:

  • 2 large cucumbers, peeled and chopped
  • 1½ cups plain Greek yogurt
  • 1 garlic clove, minced
  • 2 tbsp fresh dill, chopped
  • Juice of ½ lemon
  • Salt & pepper to taste
  • Optional: a drizzle of olive oil or chopped mint

Instructions:

  1. Blend cucumbers, garlic, and yogurt until smooth.
  2. Stir in lemon juice, dill, salt, and pepper.
  3. Chill for at least 2 hours before serving.
  4. Garnish with mint or olive oil if desired.

A vibrant blend of summer tomatoes with a zesty kick.

Ingredients:

  • 4 ripe tomatoes, chopped
  • ½ red bell pepper
  • ½ cucumber, peeled
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt to taste
  • Optional: a slice of stale bread for thickness

Instructions:

  1. Blend all ingredients until smooth.
  2. Strain if you prefer a silky texture.
  3. Chill for 2–4 hours.
  4. Serve with diced veggies or croutons for crunch.

🍈 3. Melon & Mint Soup (Sweet + Savory Twist)

Cooling and subtly sweet with a herbal finish. A summer crowd-pleaser.

Ingredients:

  • 1 cantaloupe or honeydew melon, cubed
  • ½ cup coconut milk or plain yogurt
  • 1 tbsp lime juice
  • Fresh mint leaves
  • Pinch of salt

Instructions:

  1. Blend melon with coconut milk/yogurt until velvety.
  2. Add lime juice, salt, and mint.
  3. Chill until icy cold.
  4. Garnish with extra mint or a sprinkle of chili flakes if you’re daring.
