Italian Chicken & Potatoes

Paul (Papa P) & Chef Dom Simonetti were born and raised at a section of Brooklyn, New York, where at the time was the heart of a thriving Italian community.  At a very early age, Papa P & Chef Dom began their career at the family’s Italian restaurant where they learned the family recipes, which were inspired by their Southern Italian parents and their love and respect for quality and tradition.  Now retired from the restaurant industry, Papa P & Chef Dom still have an incredible passion for cooking at home for family and friends.  Visit their website and YouTube Channel for more recipes.

 

 

INGREDIENTS:

  • 10 pieces of Thighs and or Legs
  • Salt
  • Black Pepper
  • 4 TBSP of Olive Oil (for frying Chicken)
  • 1 & 1/2 lb. of small potatoes

Dijon Lemon Sauce

  • 8 cloves of garlic (chopped)
  • 2 sprigs of Fresh Rosemary
  • 2 TBSP of Dijon Mustard
  • 1/2 cup of Italian Parsley
  • 1/2 tsp. of salt
  • 1/2 tsp. of Black Pepper
  • 1/2 tsp. of Thyme
  • 1 & 1/2 cups of chicken stock
  • 1/3 cup of olive oil
  • 3 Lemons (Juice) & 1 for slicing




DIRECTIONS:

1. Wash and pat dry the chicken pieces

2. Salt and pepper each side of the chicken

3. In a large skillet, heat olive oil on medium-high heat.

4. Place chicken into pan and reduce heat to medium and cook skin down for 8-10 minutes or until skin is golden brown.

5. Flip the pieces and cook for another 3-4 minutes.

6. Remove chicken and then add potatoes (cook for 5 minutes).

7. Prepare Sauce: in a large bowl, combine all of the sauce ingredients and whisk well.

8. In a baking pan, combine chicken, potatoes and sauce and then top with slices lemon.

9. preheat oven to 425 degrees F and then cook for 45-55 minutes.
