Yield: 5 cups
Ingredients
- 2 tablespoons olive
- 2 links, chicken sausage
- 1 can, white beans
- 4 cups bone broth [5]
- 1 bag, fresh spinach
Garnish
- 1 tablespoon chopped, scallion
- 1 tablespoon julienne, fresh basil
- grated, parmigiano reggiano
Instructions
- Heat up olive oil in a medium size pot
- Add chicken sausage (substitute for preferred sausage), and white beans
- Stir for 2 minutes
- Add bone broth, when it comes to a boil add the spinach and stir
- Taste for seasoning
- Garnish with scallions, and fresh julienned basil
- Finish off with freshly grated parmigiano reggiano
