Today's column is about a wonderful opportunity to learn about Italian cuisine and to sample some delicious dishes offered by a world class chef.
Chef Fabio Zago, Dean of La Scuola de La Cucina Italiana in Milan is the special guest at the fabulous Etcetera Etcetera Restaurant on West 44th Street, Tuesday and Wednesday, June 22 and 23rd.
Chef Fabio is going to create a 4 course Mediterranean classic demonstration and tasting, and pair appropriate wines.

Tuesday 6-22
Appetizer: Piccola Parmigiana di melanzane - Eggplant parmigiana
wine: Salice Salentino
Pasta: Fusilli con scampi, cipollotti, timo e pomodoro crudo - Fusilli with shrimp, onions, thyme and fresh tomatoes
wine: Falanghina
Main: Filetto di Branzino, spinaci novelli salsa all'aceto balsamico - Sea bass fillet with baby spinach e balsamic vinegar sauce
Wine: Chardonnay Siciliano
Dessert: Panna cotta allo yogurt, miele e lamponi - Yogurt, honey and raspberries panna cotta
Wine: Moscato d'Asti
Wednesday: 6-23
Appetizer: Gambero in crosta di mais con crema piccante di peperone - Jumbo shrimp in corn crust with spicy red pepper sauce
Wine: Abbruzzi white called Pecorino
Pasta: Pasta alla Norma (eggplant, tomatoes, ricotta) - Pasta with eggplant, tomatoes and ricotta cheese
Wine: Nero d'Avola
Main: Involtini di pesce spada con zucchine alla siciliana - Swordfish with sicilian style zucchine
Wine: Cahrdonnay from Sicily
Dessert: Tiramisu' al pistacchio e arancia - Pistachio and orange tiramisu
Wine: Moscato
